Pumpkin Spice and Everything Nice

It’s Pumpkin Spice Season, I know I’m basic. But this is one of my favorite times of the year. I’m currently drinking a homemade pumpkin spice coffee. I just added some Califia Farms Pumpkin Spice Almond Milk Creamer; tastes like heaven. I wanted to bring you all one of my favorite fall cookie recipes. I found this recipe a few years ago and altered it to make it to my own liking. Now, i know everyone is picky about their cookies, some people like crunchy, some chewy, some cakey. Well these are chewy and cakey cookies with a subtle crunch on the outside. Absolutely delicious. Now if you make these cookies, you can NOT skip the glaze, the glaze is the best part. The cookies themselves are not that sweet (Adult friendly as I like to call it), so it gives it that unf that it needs.

Prep time: 15 minutes

Cook time: 15 minutes 

Total time: 30 minutes 

Servings: 12 cookies 


Cookies Ingredients: 

  • 1 stick  (½ cup butter)

  • ¾ cup granulated white sugar

  • ¾ cup light (or dark) packed brown sugar

  • 1 large egg

  • 1 cup pumpkin puree (242 grams)

  • 2 tsp vanilla

  • 2.5 cups all purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ¼ tsp cinnamon

  • 3 tsp pumpkin pie spice


Cookie Steps:

  1. Pre-heat oven to 350 F and line 1 or 2 baking sheets with parchment paper (I like to do 2 batches of 6).

  2. In a small bowl mix your dry ingredients: flour, baking soda, baking powder, and pumpkin spice; whisk together and set aside. 

  3. On your mixer with a paddle attachment or in a bowl with a wooden spoon, combine your butter and sugars and mix until there is a creamy texture. 

  4. Add in the 1 egg and vanilla until combined (be sure to scrape the sides of the bowl so everything mixes equally)

  5. Add your pumpkin puree, and mix until combined 

  6. In 2 batches, mix in your dry ingredients from the other bowl

  7. The batter should form, it will be very sticky and not like normal dough would be 

  8. Drop scoops on your baking sheet (I like to put on gloves and form balls with the dough)

  9. Bake for 15 minutes 


Additional Notes:

  • Add a handful of pumpkin seeds after step 6 into your batter for an extra treat

  • Don't have pumpkin spice? Make your own by mixing together: 2 tsp cinnamon, ½  tsp cloves, ½  tsp ginger, ½ tsp nutmeg, ¼  tsp allspice


Brown Butter Glaze


Ingredients

  • 3 Tbsp Butter

  • ¼ cup Powder or Confectioners sugar

  • 1 Tbsp milk of choice

  • 1 tsp pumpkin spice 


Glaze Steps:   

  1. Melt butter on stove top on medium heat

  2. Let butter brown (don't let it burn! Watch it closely) 

  3. Pour browned butter in small bowl 

  4. Let cool for 3-4 minutes and then mix in sugar and milk

  5. Whisk until homogenous and then add pumpkin spice and mix 

  6. Pour into piping bag and drizzle on cookies 5 minutes after they come out of the oven. (or just use a spoon)
